  • 50 grams of capers in vinegar
  • 160 grams of canned tuna
  • 1 onion
  • 2 eggs
  • Salt and pepper to taste

Instructions:

  1. Firstly, we will prepare the dough. Start by dissolving the yeast in a half glass of warm water with the sugar. In a large bowl, pour the flour (preferably half white and half wholemeal), create a crater in the center, and pour in the yeast. Mix with a fork initially, then use your hands to form a dough. Add two small teaspoons of salt and the capers, continuing to knead until you have a smooth, elastic ball of dough.
  2. Cover the bowl with plastic wrap and let the dough rise in a warm place for about 45 minutes.
  3. Divide the dough into two equal parts. Roll out each part into a rectangle the size of your baking sheet. Spread the lightly beaten eggs onto one of the rectangles, seasoning with salt and pepper. Distribute the crumbled tuna and finely chopped onion evenly over the eggs.
  4. Place the second rectangle of dough over the filling, sealing the edges. Brush the top with a little olive oil and let it rise for another 30 minutes.
  5. Preheat your oven to 180°C (350°F) and bake the Mattonella for 45 minutes. Once done, remove from the oven and cut into squares of your desired size.

Tip: You can freeze the Mattonella squares and reheat them in the microwave for a quick breakfast or snack. For appetizers, cut them into smaller pieces and serve with toothpicks.
